Cajun Prawns serves: 6-8 preparation time: 20 minutes cooking time: 10-15 minutes Ingredients: – 1 kg medium-sized prawns – 250 ml buttermilk – 1 large egg – 200 g self-raising flour – 15 ml Cajun spice – sunflower-oil for deep-frying – mixed salad with ranch dressing, to serve Preparation: 1.Peel and devein the prawns, leaving the tail on. Pat them dry with absorbent paper. 2.Mix the buttermilk and egg together in a bowl. Mix the flour and spice together in a shallow bowl. Add 2 ml salt. 3.Dip each prawn into the buttermilk mixture, making sure they are well coated. Put them onto a baking tray and allow them to stand for five minutes, then dip them into the flour mixture again. 4.Heat the oil in a saucepan over medium heat. Once the oil is hot, add the prawns, a few at a time. (Shake off the excess flour before you fry them.) Fry until golden.
