Pork schnitzel with pea & cheddar mash

serves: 4
Ingredients:
– 1 cup seasoned flour
– 2 eggs, beaten
– 2 cups panko breadcrumbs
– 10g parsley, chopped
– 4 raw pork schnitzels
– 1⁄2 cup canola oil for frying
for the pea mash:
– 2 potatoes, peeled, cubed and cooked
– 200g frozen peas, cooked
– 1 cup cheddar cheese, grated
– 2 tbsp butter, softened
– sea salt and black pepper
to serve:
– vine tomatoes, watercress and lemon wedges to serve
Preparation:
- Place the flour, eggs and breadcrumbs in separate shallow bowls; mix parsley through the breadcrumbs.
- Dip each schnitzel first in the flour, then egg and finally the breadcrumbs. 3. Heat the oil in a large frying pan and fry the schnitzels on both sides until cooked through and golden. Set aside and keep warm.
- For the mash: Place the potatoes and peas in a pot over a medium heat and mash together, then stir through the cheese and butter. Season well.
- To serve: Serve schnitzels with pea mash, tomatoes, watercress and lemon.
