Flija
Flija is a traditional dish from northern Albania that’s often eaten at special occasions such as weddings or festivals. It’s made by pouring very thin layers of batter onto a round metal tray, and then baking it in the oven. Each layer of batter is cooked until it’s golden brown before the next layer is added, so the whole process takes several hours. When it’s ready, the flija is cut into pieces and served with honey and yoghurt.
